Recipe Ingredient

  • 700g mutton, cut into bite-sized pieces
  • 200g potatoes, cubed and deep-fried until cooked through
  • Grated coconut, squeezed for thick coconut milk; then add 2 cups water and squeeze for thin coconut milk
  • 1/2 cup oil
  • Spices (A):
  • 4–5 cm piece cinnamon stick
  • 2 star anise
  • 6 cloves
  • 4 cardamoms, split and use seeds only
  • 2 sprigs curry leaves
  • 2 stalks lemon grass, bruised
  • Ground ingredients (B):
  • 13–14 shallots
  • 6 cloves garlic
  • 4 cm piece ginger
  • 2 cm galangal
  • 10 fresh red chilies
  • 10 dried chillies, soaked and seeds removed
  • (C):
  • 2 tbsp meat curry powder
  • 1 tsp fennel
  • Seasoning:
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp lime juice

Instructions

  1. Heat oil in a saucepan and fry ingredients A until fragrant. Add in B and C and continue to fry for 3-4 minutes until oil rises.
  2. Put in mutton and water. Bring to a boil. Reduce heat and simmer for 40-50 minutes.
  3. Pour in coconut milk and add potatoes and continue to cook until meat is tender. Season to taste.
