1 cup grated cucumber or carrot or boiled and grated beetroot
1 fresh chilli, diced finely
1 onion, finelly diced
1 tsp ginger, finely grated ( optional)
1 cup matured yogurt, real sour or as preferred
1/2 a sprig of curry leaves ( optional)


Mix all of the above and serve at room temperature. It can be chilled if preferred.

One may also temper these with oil, mustard seeds, curry leaves and dried chillies for an authentic indian spread.
