Roast Pork Cucumber Boat
1 cucumber, sliced into half, remove seeds
1 stalk spring onion
1 strip roast pork (siew yoke), cut into pieces
1 tbsp cooking oil
1 shallot, chopped
Heat oil in a pot and stir-fry the shallot until lightly browned.
Then add the roast pork, fry for about 5-10 minutes until slightly burnt.
Toss the spring onions and give it a stir.
Then, scoop the ingredients and arrange inside the halved cucumber.
For flavouring, serve with Heinz tomato and HP sauce.
