Tandoori Prawns


600g large prawns
1/2 tsp salt
1/2 tsp pepper

3 cloves garlic
5 shallots
2cm ginger, chopped
1 1/2 tbsp garam masala
1 tsp salt
1/2 tsp pepper
1/4 tsp turmeric powder
1/2 tsp chilli powder
300ml plain yoghurt


Make a slit in the back of the prawns and remove entrails. Wash and trim the feelers and whiskers. Drain and dab dry with paper kitchen towels. Season with salt and pepper.

Grind garlic, shallots and ginger together. Combine with the other marinade ingredients in a mixing bowl. Add the prawns and lightly toss. Leave to marinate for at least 20-30 minutes.

Thread each prawn onto a skewer. Arrange skewered prawns in a turbo broiler over a wire rack. Grill at 200°C for 5-10 minutes. Turn over once to ensure the prawns are cooked. Serve at once.
