Recipe Ingredient

  • 10-12 fresh green chillies, seeded
  • 3 tbsp chopped lemon grass
  • 1 tbsp chopped galangal
  • 1 onion, chopped
  • 3 cloves garlic
  • 1 stalk coriander (roots and stems included), chopped coarsely
  • 8 black peppercorns, cracked
  • 1/2 tbsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp belacan granules
  • 1/2 tsp ground cloves
  • 2 bay leaves, crushed
  • 1/2 tsp salt
  • 1 to 2 tbsp oil

Instructions

  1. Blend all the ingredients in an electric blender until smooth. Add a little extra oil if necessary.
  2. To store: Keep ingredients refrigerated in a clean container until needed.
