Recipe Ingredient

  • 100g cauliflower, cut into small florets and coarsely chopped
  • 1/2 an onion, finely sliced
  • 2 tbsp finely shredded carrot
  • 2 tbsp chopped spring onion
  • 2 tbsp chopped coriander (leaves and stalk)
  • 1 tbsp sliced red chilli
  • 1 tbsp sliced green chilli
  • Batter:
  • 130g self-raising flour
  • 20g rice flour
  • 1/4 tsp turmeric powder
  • 1/4 tsp chilli powder
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp ground black pepper
  • 200ml or just enough water

Instructions

  1. Combine batter ingredients in a mixing bowl with enough water to mix into a rather thick batter. Add in all the vegetables.
  2. Drop tablespoons of the batter into medium hot oil. Fry in batches until golden brown. Drain on absorbent paper towels. Leave to cool slightly before cutting into thick slices. Serve with the spicy peanut sauce dip.
