Wild Mushroom Soup


170g shitake mushroom
170g button mushroom
170g oyster mushroom
30g basil
8g thyme
8g tarragon
8g oregano
7g rosemary
7g sage
50g garlic, crushed
170g onion, chopped
200ml white wine
3l chicken stock
70ml cream
50g spring onion, chopped
200ml olive oil
Seasoning to taste


Heat oil in a pot. Brown garlic, onion andmushrooms. Add fresh herbs. Deglaze with white wine. Then add chicken stock and reduce to the desired thickness. Add cream and reduce again. Season to taste.

Mix the soup in a blender. Ladle into a bowl. Garnish with remaining cream and spring onions.

Note: Parlanti said this soup is a favourite with Prime Minister Datuk Seri Dr. Mahathir Mohamad.
