Binka Roti (Bread pudding)
1 loaf white bread remove crust and shredded
1/2 cup santan from 1 coconut
3/4 cup sugar
4 oz raisins
1/2 cup pandan extract
1. Beat sugar with eggs until light and creamy
2. Add the coconut milk and continue to beat.
3. Add pandan juice.
4. Stir in shredded bread and raisins.Pour into a greased tray to bake about 30-40 mins. Cool and cut.
