Invented before the Prohibition Era and named after a men’s club in Philadelphia, the Clover Club consists of gin, lemon juice, sugar syrup, egg white (yes, egg white, to give it a creamy, frothy texture), and Martini Rosé, shaken on ice together with four to five muddled fresh raspberries, and double strained into a martini glass.

The result is a concoction that is obviously very berry-ish, but is not too sweet. In fact, the sweetness of the berries is very nicely balanced out by the juniper in the gin, which gives the drink a nice, dessert-like feel.
