Recipe Ingredient

  • 120g margarine
  • 350g caster sugar
  • 260g wheat flour, sieve
  • 240g fresh milk
  • 4 eggs at room temperature
  • 1tbsp vanilla essence
  • 2tsp baking powder, sieved
  • 1/4tsp salt
  • food colouring
  • 1can peaches dice half the portion, the remaining for decoration
  • For Icing:
  • 240g margarine
  • 240g shortening
  • 150g icing sugar
  • 2tsp vanilla essence
  • food colouring


  1. Beat eggs and sugar until fluffy like foam (looks like ribbon).
  2. Add flour, vanilla essence and mix well.
  3. Melt margarine and milk together and add this into 1/3 batter and mix well.
  4. Then, add 2/3 of the batter into the egg mixture. And mix till all combined well.
  5. Divide the batter equally and pour into three 7in baking tins and bake in a preheated oven of 175 degrees Celcius for 30-35 minutes.
  6. For Icing:
  7. In a bowl, beat margarine, icing sugar, shortening till white and fluffy.
  8. Add vanilla essence and mix well.
  9. Assembling the cake:
  10. Level the cakes.
  11. Put the on cake on cake boards. spread the icing and put diced peaches on it.
  12. Repeat the step above by sandwiching another cake on top of this.
  13. Finally place the last cake and icing the top with the remaining icing and decorate the cake with the peaches, strawberries and blueberries.
  14. Tips: Alternatively, crumb coat the cake and pipe roses all over the cake.
  15. To obtain different coloured cake layers, add colouring at step 4.
