Recipe Ingredient

  • 140g castor sugar
  • 360g plain flour
  • 1 tbsp baking powder
  • 2 eggs
  • 220ml milk
  • 120g butter, melted
  • 100g fresh blueberries
  • 30g sultanas


  1. Preheat oven to 200°C. Lightly grease muffin trays with butter.
  2. Sift flour and baking powder into a mixing bowl and stir in sugar to mix. Make a well in the centre of the flour.
  3. Combine milk, eggs and melted butter in a jug. Pour mixture into the flour and fold with a wooden spoon to combine. Do not over mix the batter.
  4. Add blueberries and sultanas then spoon batter into prepared tin. Bake for about 20 minutes or until muffins are well risen and golden brown.
