- 140g castor sugar
- 360g plain flour
- 1 tbsp baking powder
- 2 eggs
- 220ml milk
- 120g butter, melted
- 100g fresh blueberries
- 30g sultanas
- Preheat oven to 200°C. Lightly grease muffin trays with butter.
- Sift flour and baking powder into a mixing bowl and stir in sugar to mix. Make a well in the centre of the flour.
- Combine milk, eggs and melted butter in a jug. Pour mixture into the flour and fold with a wooden spoon to combine. Do not over mix the batter.
- Add blueberries and sultanas then spoon batter into prepared tin. Bake for about 20 minutes or until muffins are well risen and golden brown.
