Recipe Ingredient

  • 600-650 g spare-ribs (chopped into 4cm pieces)
  • Oil for deep-frying
  • Marinade (A):
  • 1 tsp light soy sauce
  • 1/2 tsp dark soy sauce
  • Seasoning (B) combined:
  • 1 tsp salt
  • 1 tbsp hoi sin sauce
  • 1 tbsp Worcestershire sauce
  • 1½tbsp sugar
  • 1/2 tbsp black vinegar (chit choe)
  • 3 tbsp tomato sauce
  • 1/2 cup water
  • 1 tsp sesame oil
  • Garnishing:
  • 1 tbsp toasted sesame seeds

Instructions

  1. Marinate spare-ribs in (A) for 30-40 minutes.
  2. Heat oil in a wok until hot. Deep-fry marinated spare-ribs until lightly golden. Remove and drain from oil.
  3. Leave 1-1½ tbsp oil in the wok, add ingredients (B) and stir-fry for 30-40 seconds.
  4. Return the spare-ribs to the wok to cook together with the sauce. Cover the wok and allow to simmer until gravy thickens.
  5. Dish out and sprinkle with toasted sesame seeds.
