Recipe Ingredient

  • 165g plain flour
  • 70g wholemeal flour
  • 3 tsp baking powder
  • 2 heaped tbsp milk powder
  • 160g soft brown sugar
  • 180g margarine
  • 1 tsp vanilla essence
  • 160ml hot water
  • 150g mixed dried fruits


  1. Soak the mixed fruits in hot water and leave aside for an hour.
  2. Line patty tins with paper cupcake cases and preheat oven to 200°C.
  3. Sift flour, milk powder, baking powder and wholemeal flour together.
  4. Cream margarine, sugar and vanilla essence until light and creamy then add in sifted flour gradually. Add the soaked fruit mixture and mix until well combined.
  5. Fill cupcake cases with the batter up to three-quarters full and bake for 15–20 minutes or until golden brown and cooked through.
