Pepper and Coriander Chicken


500g chicken, cut as desired
1/2 cup onions, onions
2 tbsp ginger, finely chopped
1 tbsp garlic, finely diced
5 tbsp ground coriander, roasted
2 tbsp black or white peppercorns, coarsely crushed
1 medium sized tomato, diced
1 green chilli
1/2 tsp turmeric powder
1/4 tsp cumin powder or whole cumin
1/4 tsp fennel powder or whole fennel
1 stick cinnamon
2 star anise
1 sprig curry leaves
oil for frying
1-2 cups water or as desired


Heat oil over low heat, add onion, ginger, garlic and all the spices except the peppercorns and saute the masala till fragrant.

Add chillii, tomato, curry leaves, salt and chicken. Coat chicken with the masala and add 1 cup or more of water and cook chicken covered. Salt to taste.

When the chicken is done, add crushed pepper and serve immediately.

Note: Adjust water and spice as desired.
