Hainanese Chicken Rice Chilli Sauce

Ingredients

10–12 fresh red chillies
3 bird´s eye chillies
5–6 cloves garlic
3–4cm piece young ginger
1/2 tsp salt
1/2 tbsp sugar
Juice of two small limes (kat chye or limau kasturi)
2 tbsp melted chicken fat (taken from your steamed chicken)

Method

Combine all the first seven ingredients together in an electric blender. Process until just fine then stir in chicken fat to mix. Adjust seasonings to your desired taste.
