FOR the month of Ramadan, the Garden Terrace and Pool Side at the Klang Executive Club is offering a sumptuous buffet spread featuring special dishes including its signature roasted lamb.

Known for its roasted lamb, the executive sous chef Mah Yip Sek, and his assistants Majid Hassan and Helmy Jaafar, marinated the whole lamb from midnight to late afternoon before it was roasted over a slow fire leaving the inner layers of the meat with a pink hue.

All three chefs cooked up dishes such as Chicken with Mango Salad, Beef Kurma, Mysore Mutton Curry, Senangin Gravy Fish, Crab With Japanese Tofu and Kelantanese Egg Curry.

For dessert, there are 10 types of Malay cakes, jelly fruits and fruit cocktails.

The buffet features close to 100 authentic traditional kampung favourites from various states.

Chef Mah said diners breaking fast at the club loved the roasted lamb.

“We used more than 10 spices and sauces to marinate the lamb. The fresh spices used lend a unique taste to the meat.

“For this year, the crowd at times swells to 700 people and we are required to roast at least four lambs in one evening,” said Mah who has 28 years of experience in the field.

He added that the roasted lamb went well with the Briyani Gam.
