The Tom Collins is a refreshing, lemon-y cocktail that was supposedly invented by a bartender called John Collins, but was renamed the Tom Collins because it was predominantly made using a gin called Old Tom back then.

The first written recipe for the cocktail was published way back in 1876 by Jerry Thomas, the legendary “Father of Mixology”.

Comprising 50ml gin, 20ml lemon juice and 20ml simple syrup all shaken up with ice and served in a highball glass, Ash added his own touch to the recipe by using Tanqueray Ten, and adding a dash of grapefruit bitters to bring out the flavour of the gin.
