Recipe Ingredient

  • 500g trotters, chopped into pieces
  • 300g sea cucumber, cut into pieces
  • 7 dried Chinese mushrooms, soaked until soft
  • 6-7 red dates
  • 3 cloves garlic, chopped
  • 6 slices ginger
  • 2 tbsp oil
  • 2 cups water
  • Gravy ingredients
  • 2 tbsp oyster sauce
  • 2 tbsp light soya sauce
  • 1 tbsp dark soya sauce
  • 3/4 tbsp sugar or to taste
  • 3/4 tsp salt
  • 1/8 tsp pepper


  1. Trim off excess fat from the trotters. Wash and drain. Heat oil in a wok and fry ginger and garlic until lightly golden and fragrant. Add trotters, sea cucumber and mushrooms and stir-fry for 1-2 minutes.
  2. Add water and gravy ingredients. Bring to the boil, then allow to simmer over low heat for an hour. Add red dates and continue to simmer for another 30 minutes or until meat is tender. Dish out and serve.
