Recipe Ingredient

  • 1.1kg Diamond Flour (high protein flour)
  • 100g sugar
  • 100g butter
  • 2.5 eggs
  • 20g salt
  • 20g yeast
  • 50g cinnamon powder
  • 60g stollen spice
  • 450ml fresh milk
  • 500g mixed fruits
  • 125g almond flakes


  1. Mix all the ingredients except butter, mixed fruits and almond flakes. Beat for 8 minutes.
  2. After 80% mixing, add butter and beat at slow speed . Finally, add mixed fruits and almond flakes. Mix for 3 minutes.
  3. Remove the dough and divide it into portions of 500gm each. Then let the dough rise for 30 minutes.
  4. Shape the dough to stollen shape and put on the tray and let it rise until it doubles its size.
  5. Bake the stollen in the oven for 20 minutes at 180ºC.
  6. When the stollen is completely baked, glaze with butter and dip in sugar and let it cool on a wire rack.
