Recipe Ingredient

  • 1 boxfruit mix
  • 8oz brown sugar
  • 1 cupwater
  • 4oz butter
  • 1tsp soda biicarbonate
  • 2 eggs
  • 1tsp brandy (optional)
  • 8oz flour
  • 1tsp baking soda


  1. Chop fruit mix into small pieces. In a pot melt butter and then mix fruits, sugar and water. Boil them for 10 mins in slow fire
  2. Stir the mixture all the time add soda bicarbonate and stir. Allow to cool. When mixture is cool beat 2 eggs into a separate bowl, add this into the pot and stir then put aside.
  3. In a bowl add one teaspoon baking powder to 8 oz flour. Sieve the flour twice. Add flour into mixture (part 1) 2 or 3 spoonful at a time and stir. Grease 2 containers approximately 8 cm by 24 cm.
  4. Pour in mixture and bake for one hour.
