Recipe Ingredient

  • 200g plain flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 1/4 tsp cinnamon powder
  • 1/2 tsp salt
  • 4 eggs
  • 195g castor sugar
  • 155ml canola oil
  • 150g grated carrot
  • 100g mixed dried fruits
  • 50g toasted walnuts, coarsely chopped


  1. Line and grease a loaf pan. Preheat oven to 180°C.
  2. Sift flour, baking powder, bicarbonate of soda and cinnamon powder into a mixing bowl. Stir in salt to mix.
  3. Combine eggs, sugar and oil in a jug. Stir to mix then add to the flour mixture.
  4. Add grated carrot and walnuts and mix into the batter.
  5. Transfer batter to prepared pan and bake for 35-40 minutes or until cooked through when tested with a skewer. Allow cake to stand for 10 minutes before turning out onto a wire rack to cool completely.
