Recipe Ingredient

  • 280g plain flour
  • ¾ tbsp baking powder
  • 100g soft brown sugar
  • 15g dried figs, chopped
  • 30g dried apricots, chopped
  • 20g dried mangoes, chopped
  • 2 small eggs, lightly beaten
  • 100g melted butter
  • 200ml fresh UHT milk
  • ¾ tsp vanilla essence


  1. Grease a 12-hole muffin pan and preheat oven at 200°C.
  2. Sift flour and baking powder into a bowl. Add sugar and dried fruits.
  3. Combine eggs, butter, essence and milk in a bowl. Pour mixture onto the dry ingredients and stir until well combined.
  4. Pour batter into prepared muffin pan until three quarters full. Bake for 20-25 minutes or until well risen and lightly golden. Serve muffins warm.
