Recipe Ingredient

  • 200g butter
  • 250g soft brown sugar
  • 2½ tsp vanilla essence
  • 300g cocoa powder
  • 220g self-raising flour
  • ½ tsp bicarbonate of soda
  • 5 large eggs, beaten
  • 230g good quality dark chocolate, chopped
  • 80g macadamia nuts, chopped


  1. Preheat oven to 180°C and line a lamington tin with non-stick parchment paper.
  2. Melt the butter in a deep saucepan and stir in soft brown sugar and vanilla essence over a low heat. Remove and leave aside to cool slightly for 10-15 minutes. Sift in cocoa powder and stir in beaten eggs until well blended. Sift in self-raising flour, bicarbonate of soda and add the chopped macadamia nuts and chocolate to mix.
  3. Pour the mixture into prepared tin. Bake for 40-45 minutes, then cool and cut into serving pieces.
