Recipe Ingredient

  • 275g butter
  • 220g castor sugar
  • 5 eggs
  • 1 tsp vanilla essence
  • 2 tbsp UHT milk
  • Sift:
  • 235g plain flour
  • 2 tsp baking powder
  • Combine:
  • 60g toasted walnuts, coarsely chopped
  • 50g sultanas
  • 1 tbsp flour


  1. Line and grease a 21cm cake pan. Preheat oven to 170ºC.
  2. Cream butter and sugar in a mixing bowl until light and creamy. Add eggs one at a time, beating well after each addition. Add vanilla essence and beat until light and fluffy. (If mixture curdles, add a little flour.)
  3. Fold in flour and baking powder and add milk gradually. Mix in walnuts and sultanas. Turn mixture into prepared pan and bake for 50-60 minutes or until done when tested with a wooden skewer.
