- 1 small black chicken, skinned and cut into 4 pieces
- 20g white fungus
- 4 red dates, stoned
- 10g pow sum soe
- 1 tsp salt or to taste
- 2 cups boiling water
- Soak white fungus for 5-10 minutes. Trim the stems and discard the hard centre. Tear into small florets.
- Put chicken, white fungus, dates, pow sum soe and two cups boiling water in an upper pot of a double-boiler. Fill lower pot with enough boiling water but ensure that it does not overflow. Place upper pot into lower pot and simmer over a medium-low heat. Double-boil for 1 hour.
- Add salt to taste.
