Recipe Ingredient

  • 200ml water
  • 25ml fresh milk
  • 1 tbsp castor sugar
  • 85g butter
  • 2 eggs
  • Sifted together:
  • 150g superfine flour
  • 25g high protein flour
  • 2 tbsp cocoa powder
  • 1/8 tsp salt


  1. Combine water, milk, sugar and butter in a saucepan over low heat. Heat gently to melt the butter and bring the mixture to the boil.
  2. Add sifted dry ingredients all at once. Cook, stirring vigorously over low heat for 1-2 minutes or until the mixture leaves the sides of the pan and forms a ball. Leave aside to cool slightly.
  3. Transfer mixture to a mixing bowl and use an electric mixer to beat the mixture. Add in eggs, one at a time, beating well after each addition until the choux pastry is smooth and glossy.
