  • 3 shallots, sliced
  • 20 cilipadi, pounded coarsely
  • 1 tbsp dried prawns, chopped coarsely

  • 1 tbsp fish sauce (nampla)
  • 1/2 tbsp sesame oil
  • 2 tbsp toasted sesame seeds
  • Chopped coriander leaves and stalks

  1. Remove prawn shell and vein. Poach until pink and firm. Halve lengthwise. Combine dressing ingredients together. Add chilli padi, dried prawns, onions and shallots.
  2. To serve, toss prawns and mango slices with dressing. Add a sprinkling of sesame seeds and chopped coriander. Serve immediately.
  3. If you are making this dish for a party, an attractive way to present it would be to have a tray with all the ingredients in small individual bowls. Toss the salad or kerabu at the table just before serving.
