Recipe Ingredient

  • 4 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion (finely chopped)
  • 500 g basmati rice (washed, soaked and drained)
  • 50g lentils (washed, soaked and drained)
  • 1 medium carrot (julienned)
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cumin
  • 1/4 tsp ground turmeric
  • A pinch of salt
  • 600 ml (water to cook rice)
  • 1/4 tsp saffron threads (soaked in a little hot water)
  • 50 g dates (pitted and chopped)
  • 50 g unsalted pistachios (toasted)
  • 50 g slivered almonds (toasted)
  • 50 g raisins
  • 50 g Dried Cranberries

Instructions

  1. Heat oil and butter in a rice pot then add the onions and sauté it until fragrant and translucent. Stir in the rice and lentils, followed by the carrot, cardamom, cumin, turmeric and salt. Add sufficient water to cover the rice and leave to cook.
  2. When rice is halfway done, pour the saffron with the water into the rice cooker and be mindful not to stir. Once rice is cooked, stir in half the dates, nuts, raisins and berries, and scatter the rest over the rice when serving.
