Recipe Ingredient

  • 500g spareribs
  • Marinade (A)
  • 1 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • ½ tsp pepper
  • 1 tbsp sugar
  • ¾ tsp bicarbonate of soda
  • 4 tbsp water
  • Marinade (B)
  • 1½ tsp Chinese five spice powder
  • 1 tsp salt
  • 1 tsp thick soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp corn/tapioca flour


  1. Cut the spareribs into 5cm pieces. Wash and drain well.
  2. Add marinade (A) to the spareribs and allow to sit for 30-35 minutes. Mix in marinade (B) and leave aside for another 30 minutes.
  3. Line a baking tray with foil and place a wire rack over it. Arrange the marinated spareribs evenly on the wire rack.
  4. Preheat oven to 200°C then roast the ribs for 12-15 minutes.
  5. Pull out the tray and turn the ribs over. Add a little oil to the remaining marinade then brush over the ribs.
  6. Reduce the heat to 190°C and continue to cook for another 15 minutes or until the meat is cooked through.
