  • Marinade:
  • 3/4 tsp salt
  • 1 tbsp Chinese Five Spice powder
  • Dash of pepper
  • 1½-2 tbsp oil

  4. Reduce the temperature to 180°C and continue to roast the pork.
  5. Bring out the pork cutlets and cover loosely with a piece of aluminium foil, then continue to roast at a reduced temperature of 180°C for about 50-60 minutes or until the meat is cooked through.
  6. Chop the pork rack cutlets into individual cutlet pieces and serve immediately.
