Recipe Ingredient

  • 300g tapioca, skinned
  • 150g plain flour
  • 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 175ml evaporated milk
  • 50g melted butter
  • 125g icing sugar, sifted


  1. Parboil tapioca until just cooked. Grate coarsely.
  2. Combine grated tapioca, salt, sugar, eggs, baking powder, milk and melted butter in a mixing bowl. Stir well to blend. Sift in flour and stir well to blend.
  3. Pour batter onto a slightly greased pan or use a non-stick pan. Cover and cook over medium low heat for two to three minutes.
  4. When cooked, remove with a palette knife. Serve immediately.
