Recipe Ingredient

  • 4 big crabs (1 to 1.5kg), shelled and cut into bite-size pieces
  • Combine:
  • 1 cup corn flour
  • 1 tsp curry powder
  • Chopped ingredients:
  • 3 cloves garlic, chopped
  • 3 shallots, chopped
  • 2cm piece ginger, chopped
  • 3 tbsp oil
  • 12 curry leaves, chopped
  • 2 tomatoes, quartered
  • 1 big onion, quartered
  • Spices (combined):
  • 1 tbsp chilli paste
  • 1/2 tsp ground fennel (jintan manis)
  • 1 tsp ground cumin (jintan putih)
  • 1 tsp ground coriander (ketumbar)
  • 1 tbsp tomato sauce
  • Seasoning:
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tsp ikan bilis stock granules
  • Garnishing:
  • Chopped coriander leaves

Instructions

  1. Coat crab pieces with combined corn flour mixture. Deep-fry until crispy. Drain on absorbent kitchen paper.
  2. Heat oil in a wok and fry chopped ingredients until fragrant. Add curry leaves.
  3. Mix in spice ingredients and stir-fry well. Add crabs, onions, tomatoes and seasoning. Toss well and stir-fry till crabs are evenly cooked. Dish out and garnish. Serve immediately.
