Winter Melon Soup with Dried Cuttlefish
600g spareribs, chopped
400g winter melon, remove the skin and cut into sizeable pieces
1 small-sized dried cuttlefish, cleaned and cut into pieces
4 – 5 red dates, seeded
2 dried scallops
2 litres water
Salt to taste
Bring water to a boil. Add in spareribs, cuttlefish, dates and scallops. Bring to a boil.
Put in winter melon and boil. Reduce heat once it has come to a boil. Simmer for 1–1½ hours until meat is tender and soup has the beautiful aroma of the cuttlefish. Season to taste.
