THIRTY new dishes are available at The Emperor Restaurant under a promotion known as “Legendary Cantonese Cuisine.”

The Emperor serves halal Cantonese fare and is located on the mezzanine level of Grand Dorsett Subang.

The man in charge of the new dishes is chef Shek Kam Yung, who began his culinary career in 1972.

He specialises in preparing dim sum, and Cantonese and Szechuan delicacies.

Some of his specialities include Deep Fried Eel with Salt & Pepper, Fried Fresh Scallop with Yellow Chives, Crispy Sliced Duck Meat with Pineapple in Sweet & Sour Sauce, andStir-fried French Beans with Minced Chicken Meat.

“It has been a while since I last cooked; now as a guest chef I will take this opportunity to test my cooking skills again,” said Yung.

Guests visiting The Emperor Restaurant will have a chance to enjoy Yung’s creations during lunch and dinner time.

“Just try what you like and what makes you happy and enjoy it.

“It is a trend in Hong Kong to use yellow chives in Cantonese cuisine.

“I am also using the ingredient for dishes served in this restaurant.

Chefs used to use chive for only certain ingredients.

“If chefs stick to that idea then competition is very unlikely.

“Now, they try to experiment with their food and ingredients while keeping to the traditional style of cooking,” he added.

As evidenced in his choice of ingredients, Yung was happy to note that this promotion gave him the chance to experiment.
