Combine both types of flours in a mixing bowl. Add sugar and salt to mix.
Make a well in the centre of the flour. Break in the egg and stir to mix. Gradually pour in water. Mix into a smooth batter.
Heat oil in a wok until hot. Put a ladle into the hot oil. Remove the ladle and pour in enough batter to fill up to a quarter full. Place the ladle into the hot oil.
Once the batter starts to set, shake the ladle to allow the cracker to float up. Leave the cracker in the oil until golden and crispy. Remove with a slotted spoon and drain on crushed paper kitchen towels.
