Recipe Ingredient

  • 125g butter
  • 80g castor sugar
  • 1/2 tsp vanilla essence
  • 1 egg yolk
  • Pinch of salt
  • 160g plain flour, sifted
  • Coarsely chop:
  • 25g pecans
  • 25g pistachios
  • Topping:
  • Enough walnut halves


  1. Line baking trays with non-stick baking paper and preheat oven to 180°c.
  2. Cream butter, sugar and vanilla essence until light and fluffy. Beat in egg yolk and salt.
  3. Stir in sifted dry ingredients, mix well and add the chopped nuts.
  4. Roll teaspoonfuls of the mixture into small balls and place them on the prepared trays, spacing them evenly.
  5. Flatten each piece of dough slightly and top with half a walnut for decoration. Bake in a preheated oven for 12 - 15 minutes or until golden in colour. Remove on to wire racks to cool completely before storing in airtight containers.
