place theeggs in a pot with enough water to completely cover them. It is common to hv the water already at a simmer when preparing soft-cooked eggs. however, hard-boiled eggs can be put into simmering or cold water at the start. Always lower the eggs gently into the pot wo they would not crack. Do not allow the water to boil rapidly. Water that is close to a simmer will allow the eggs to cook evenly without toughening the whites. In addition to toughening the whites, rapid boiling can cause the eggshells to crack. once the water comes to a boil imedtly lower the temperature o a simmer. then begin timing the cooking at this point.
