Recipe Ingredient

  • 135g icing sugar
  • 80g breadcrumbs
  • 95g plain flour
  • 90g butter, melted
  • 1/4 tsp almond essence
  • 100ml milk
  • 6 egg whites
  • 135g fresh raspberries


  1. Preheat oven to 180°C and lightly grease a 12-hole friand pan or muffin pan.
  2. Combine icing sugar, breadcrumbs and flour in a mixing bowl. Add melted butter, milk and essence. Stir gently until well combined.
  3. In a clean bowl beat egg whites until frothy, then fold into breadcrumb mixture. Gently fold in raspberries.
  4. Divide mixture evenly into prepared pan and bake for 25-30 minutes or until a skewer inserted into the centre of a friand comes out clean. Stand friands in the pan for 5-6 minutes before turning out onto a wire rack to cool completely.
