Recipe Ingredient

  • 500g bread flour (Diamond brand, if available)
  • 5g bread improver
  • 15g yeast
  • 2 teaspoons salt
  • 320ml water
  • 30g shallots, peeled, sliced and deep fried
  • 10g garlic, peeled and chopped
  • 30 pieces ketupat casings


  1. Combine the dried ingredients in a large mixing bowl. Make a well in the centre and add the water. Mix well to form a pliable dough.
  2. Turn the dough out onto a floured surface and knead until smooth, about 5 minutes. Mix in the garlic and fried onions. Knead for another few minutes.
  3. Shape dough into a ball and place in the mixing bowl. Cover with a clean kitchen towel. Allow to proof until doubled in size, about 1 hour.
  4. Punch down the dough and knead lightly. Divide dough into 10g portions and shape into balls. Stuff into the ketupat casings and cover with a kitchen towel. Set aside for 10 minutes before baking in a preheated oven at 190°C for 12 minutes.
