Recipe Ingredient

  • Ingredients for the bread (Make 2 loaves)
  • 100 ml cold water
  • 20 gm butter
  • 1/3 egg - beaten
  • 1/2 tsp salt
  • 160 gm bread flour
  • 40 gm plain flour
  • 2 tsp milk powder
  • 21/2 tbsp sugar
  • 1 1/3 tsp yeast
  • Ingredients for Sponge Cake
  • (A)
  • 330 gm eggs (without shell)
  • 400 gm Sponge Mix Flour
  • (B)
  • 130 gm melted butter
  • (C)
  • 1 tsp coffee paste
  • 1 tsp chocolate paste


  1. Method for making the bread.
  2. Add all ingredients into the bread pan in the order listed above /stand mixer.
  3. Using Bread Machine.
  4. Knead the dough in the bread machine using the Dough cycle for 1/2 hour. After 1/2 hour take the dough from the bread machine and put it in a bowl, cover with a plastic film, let it proof in a warm place for 50- 60 minutes, or until it is double its size.
  5. Using Stand Mixer:
  6. Dough may be mixed and kneaded in a bowl of a stand mixer using the flat beater for mixing the dough ingredients, and using the dough hook attachment for kneading ( knead the dough for 1/2 hour )
  7. Place dough in a large bowl, cover with plastic film and let it proof in a warm place for 50 to 60 minutes or until it has doubled in size.
  8. Note: The best place to proof the dough is in the oven without switching it on. Put two cups of hot water in the oven to provide some heat and water vapour.
  9. After the dough has doubled in size, turn it out onto a floured surface and knead lightly, knocking out any large air bubbles. Divide dough into 4 equal portions and shape each piece into a ball. Let them rest for 10 minutes. Flatten them and roll each of them up like a swiss roll . Greased 2 sandwich loaf tins (L18 cm x W 10 cm x H 10 cm ) and line the side and bottom with greaseproof papers. Place 2 rolls into each sandwich loaf tin . Cover and leave it to proof (in the oven with 2 cups of hot water) for 45 minutes or until it has double in size. Pour in the sponge cake batter. Bake for 25 minutes at 180 C. Remove immediately when baked. Let it cool on wire rack.
  10. Method for making Sponge Cake
  11. Cream (A) till light and fluffy. Add in (B) and mix well. Lastly add (C) and mix till well incorporated. Divided the batter into 2 equal parts and pour it into the sandwich loaf tins.
