Recipe Ingredient

  • 3 eggs
  • 1/4 cup UHT milk
  • 1 tbsp brandy
  • (A):
  • 325g mixed fruits
  • 1/2 cup water
  • (B):
  • 250g butter
  • 150g castor sugar
  • 1/2 tsp vanilla essence
  • (C) - sifted:
  • 175g plain flour
  • 2 tsp baking powder
  • 1/4 tsp bicarbonate of soda


  1. Boil (A) over gentle heat till mixture is dry. Set aside to cool completely. Beat (B) till pale and light. Add eggs, one at a time, beating well after each addition. Fold in sifted ingredients (C) and stir in milk. Lastly, add brandy.
  2. Combine batter with the fruit mixture. Stir well to mix. Turn out mixture into a greased and floured cake tin. Cover with a double layer of grease-proof paper. Steam for two hours or until cake is cooked when tested with a skewer.
