Recipe Ingredient

  • 1 green apple, peeled, cored and diced
  • 30g walnuts, chopped
  • 25g blackcurrants
  • 90g soft brown sugar
  • 200g self-raising flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 tbsp milk
  • 125g unsalted butter, melted
  • ½ tsp vanilla essence
  • 1 egg


  1. Preheat oven to 180°C and lightly grease a muffin tray with corn oil. Sift flour, baking powder and salt together.
  2. Stir sugar into combined sifted ingredients. Whisk milk, essence, melted butter and egg in a separate bowl.
  3. Make a well in the centre of the dry ingredients. Pour in the whisked mixture and mix with a wooden spoon until smooth.
  4. Add apple, walnuts and blackcurrants. Mix well, then spoon batter into muffin tin. Fill until three-quarters full.
  5. Bake for 20-25 minutes or until well risen and firm to the touch. Remove from the oven and cool on a wire rack.
