Recipe Ingredient

  • 120g margarine
  • 110gm castor sugar
  • 1 tbsp lime juice
  • 250g bananas, mashed
  • 1/2 tsp vanilla essence
  • Sift
  • 250g self-raising flour
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda


  1. Line and grease a 20cm square or round cake pan. Preheat oven to 180-190°C. Beat margarine, sugar and essence till light and fluffy. Stir in lime juice. Fold in sifted flour.
  2. Add in mashed bananas with a metal spoon. Mix in gradually. Pour mixture into a prepared cake pan.
  3. Bake in preheated oven for 40-45 minutes or until cake is cooked through when tested with a skewer.
