Recipe Ingredient

  • 70g extra virgin olive oil
  • 1 nos lemon (zest and juice)
  • 150g all purpose flour
  • 2 nos eggs
  • 200g milk
  • 170g sugar
  • 3g baking powder
  • 2g baking soda
  • 2g salt


  1. Whisk the flour, baking powder and baking soda. Set aside
  2. In a bowl, mix the sugar, salt and lemon zest to enhance the lemon oil from the zest
  3. Then, incorporate the eggs, milk, lemon juice followed by olive oil. Mix till the sugar dissolves.
  4. Fold in the sifted flour mixture till its well combined. Transfer over to a lined 7" baking tin and bake for 25-30 minutes.
  5. Use a bamboo skewer to check if the middle is cooked. Once done, let it cool for at least 20-30 minutes and enjoy!
