Recipe Ingredient

  • 300g egg white
  • 250g sugar
  • 25g cornflour
  • 8ml white vinegar
  • 1 drop vanilla essence
  • 2 oranges (segmented and membranes removed)
  • 2 kiwifruit (peeled and sliced)


  1. Brush a 28cm cake ring with some melted butter, then dust with sugar.
  2. Whisk egg white until soft peaks are formed. Add vinegar, cornflour and vanilla essence. Whisk until the mixture is stiff.
  3. Add half portion of the sugar and whisk the mixture again until it appears to be glossy. Fold in the remaining sugar and chopped orange segments.
  4. Pour the mixture into the prepared cake ring. Bake at 100ºC for an hour.
  5. Turn out and serve pavlova with whipped cream. Garnish with kiwifruit and orange segments.
