- Deep-fry chicken feet in hot oil for a while. Remove and rinse under running water until oil is removed. Soak in water for half an hour. Alternately you can purchase prefried chicken feet.
- Heat sesame oil and fry ginger and dried chillies for 30-40 seconds. Add spice (A) and continue to fry until fragrant.
- Add mushrooms, chicken feet and seasoning (B). Pour in water or chicken stock granules. Bring to a boil then reduce the heat and simmer until chicken feet is tender and gravy is reduced.
