Recipe Ingredient

  • 1 small or 1/2 large free range chicken
  • Salt and pepper
  • Corn flour for dredging
  • 1 cup oil (for frying)
  • Sauce:
  • 3 tbsp lemon juice
  • 1 tbsp apricot jam
  • 1 tsp finely shredded lemon rind
  • 75 ml water
  • 1 level tsp cornflour


  1. Cut chicken into serving pieces. (If serving small children, you may even like to de-bone the chicken.) Season chicken pieces with salt and pepper and then roll in the corn flour, shaking off excess.
  2. Heat oil in a shallow pan or wok and fry chicken, a few pieces at a time, until golden brown. As they cook, transfer them onto a serving dish.
  3. To make sauce, combine all the sauce ingredients in a small pan and stir over low heat until sauce bubbles and thickens. Drizzle over the chicken and serve immediately.
