Recipe Ingredient

  • 1 whole chicken (cut in medium pieces for frying)
  • 2 strands of curry leaves
  • To Grind:
  • 4 pips garlic
  • 5cm ginger
  • 1 tbsp jintan putih
  • 1 tsp black pepper
  • 20 dried chillies
  • 2 medium-size onions (sliced)
  • 2 pandan leaves
  • 3 cloves
  • 1/2 a lime
  • 300ml water
  • salt and sugar to taste


  1. Marinate chicken pieces with some saffron, salt, white pepper and cornflour for 10 minutes. Use about one and a half cups of oil and fry the chicken. Leave aside.
  2. Scoop out about 3/4 cup of the same oil and fry the ground ingredients together with the curry leaves, pandan leaves and onions. Add the fried chicken and stir. Add water, salt and sugar. Simmer until gravy thickens.
