Recipe Ingredient

  • Honey mustard mayonnaise:
  • 1 tsp honey
  • ½ tsp mild (preferably whole grain) mustard
  • Generous pinch of freshly-ground
  • black pepper
  • 2 tbsp mayonnaise
  • Slices of pan-fried or roast chicken *
  • Thick slices of whole meal or multi-grain bread (I prefer the bread toasted for extra crunch!)
  • lettuce, tomato and cucumber slices
  • * You can also use cold cuts such as turkey ham, beef pastrami, chicken bologna, etc.


  1. Either use slices of ready-roasted chicken or pan fry chicken breasts which have been rubbed with a little salt, pepper and/or any other seasonings of your choice (spices, herbs, curry powder, etc.). Allow chicken to cool for 10 minutes before cutting into 0.5 cm slices.
  2. Mix all the ingredients for the honey mustard mayonnaise in a small bowl.
  3. Assemble sandwich using the sliced chicken and vegetable in layers, adding some honey mustard mayonnaise in between the layers. For maximum enjoyment, eat immediately.
