Recipe Ingredient

  • 500g medium-large prawnsshelled but with tails intact
  • Marinade
  • ¼tsp salt
  • 1tsp pepper
  • ½tsp sugar
  • ¼tsp bicarbonate of soda
  • 1tsp egg white
  • 1tbsp cornflour
  • Batter
  • 100g self-raising flour
  • 200g rice flour
  • 1tsp baking powder
  • ½tsp salt
  • 300ml water
  • Mayo sauce ingredients
  • 5tbsp mayonnaise
  • 1tbsp calamansi juice
  • salt and sugar to taste
  • 2tbsp wasabi
  • 1tsp toasted black or white sesame seeds


  1. Season prawns with marinade for 20 minutes.
  2. Combine flours, baking powder and salt in a mixing bowl. Pour in water gradually to mix to a smooth batter.
  3. Heat oil in a wok and dip prawns in batter. Deep-fry until golden brown. Remove and place on kitchen paper towels.
  4. Combine mayonnaise with salt, sugar and calamansi juice to taste. Stir in wasabi. Sprinkle with sesame seeds.
  5. Serve sauce with the prawns.
